Ingredients

4 pork sausages
1 medium sized red onion
1 medium sized green paper chopped into chunks
1 medium sized red pepper chopped into chunks
1 cup of cherry tomatoes chopped
1 cup of tomato sauce
1 1/2 cup of vegetable vegetable broth
Fresh rosemary
Fresh parsley
Sage
Salt and pepper
Olive oil

Method

1. In a large pot add olive oil and the sausages, cook until they are golden brown from each side.
2. When the sausages are ready set them aside and add the onions, bell peppers and cherry tomatoes. Cook for a few minutes.
3. Add the tomato sauce, vegetable broth and herbs. Cover the pot and let it simmer for 25 minutes on low heat .
4. Add the sausages salt and pepper and let cook for 15 more minutes.
5. Serve the stew with toasted bread and fresh parsley on top.
