Ingredients
- 300g macaroni
- 200g Dewfresh Collar Bacon, diced
- 50g butter
- 50g plain flour
- 500ml milk
- 150ml cooking cream
- 150g mature cheddar, grated
- 100g gouda, grated
- 1 tsp dijon mustard
- Salt & pepper, to taste
- 30g shredded cheese, for the topping
Method
- Cook the macaroni: Bring a large pot of salted water to the boil. Cook the macaroni according to the packet instructions until al dente. Drain and set aside.
- Cook the bacon: Heat a frying pan over medium heat and cook the diced Dewfresh Collar Bacon until golden and crispy. Set aside.
- Prepare the cheese sauce: In a saucepan, melt the butter over medium heat. Add the plain flour and whisk continuously for 1–2 minutes to form a smooth paste.
- Add the milk and cream: Gradually pour in the milk, whisking continuously to prevent lumps. Stir in the cooking cream and cook until the sauce begins to thicken.
- Make it cheesy: Add the mature cheddar, Gouda and Dijon mustard. Stir until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.
- Combine everything: Add the cooked macaroni and crispy bacon to the cheese sauce. Mix well until everything is evenly coated.
- Bake: Transfer the mixture to an ovenproof dish and sprinkle the shredded cheese over the top. Bake in a preheated oven at 200°C for 15–20 minutes, or until bubbling and golden on top.
- Serve: Allow the mac and cheese to rest for a few minutes before serving. Enjoy while warm and creamy!
