- 6 large bell peppers
- 500g Dewfresh Chicken Mince
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 400g chopped tomatoes
- 150g cooked rice
- 1 × 400g can cannellini beans, drained and rinsed
- 100g sweetcorn
- 1 tsp Schwartz Sweet Paprika
- 1 tsp Schwartz Chilli Powder
- ½ tsp Schwartz Dried Oregano
- ½ tsp Schwartz Dried Thyme
- Schwartz Salt and Black Pepper, to taste
- 100g grated cheese
- Prepare the peppers: Preheat the oven to 200°C. Cut the tops off the bell peppers and remove the seeds and membranes. Arrange the peppers upright in a large baking dish and season lightly with salt and pepper.
- Cook the onion and garlic: Heat the olive oil in a large frying pan over medium heat. Add the chopped onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Cook the chicken mince: Add the Dewfresh Chicken Mince to the pan. Cook for 7–8 minutes, breaking it up with a wooden spoon, until browned and cooked through.
- Add the tomato sauce and seasoning: Stir in the tomato paste, chopped tomatoes, Schwartz Sweet Paprika, Schwartz Chilli Powder, Schwartz Dried Oregano and Schwartz Dried Thyme. Season with Schwartz Salt and Black Pepper to taste. Simmer for 5–7 minutes, allowing the sauce to thicken slightly.
- Add the rice, beans and sweetcorn: Stir in the cooked rice, cannellini beans and sweetcorn. Cook for another 2–3 minutes until the ingredients are well combined and heated through.
- Stuff the peppers: Spoon the chicken, rice, bean and tomato mixture generously into each prepared pepper. Sprinkle the grated cheese evenly over the top.
- Bake until tender and golden: Cover the baking dish loosely with aluminium foil and bake for 25–30 minutes. Remove the foil and return the dish to the oven for another 8–10 minutes, or until the peppers are tender and the cheese has melted and turned lightly golden. Ensure the chicken filling is piping hot throughout.
- Serve: Remove from the oven and allow the peppers to rest briefly before serving. Enjoy warm as a satisfying family meal.
Tips for the Best Chicken Stuffed Peppers
- Choose peppers that stand upright: This helps keep the filling in place during baking.
- Adjust the heat: Reduce the Schwartz Chilli Powder for a milder flavour, or add a little more if you prefer extra spice.
- Prepare ahead: Make the filling in advance and refrigerate it until you are ready to assemble the peppers.
- Use your favourite grated cheese: Cheddar, mozzarella or a ready-grated cheese blend can all work well in this recipe.
Frequently Asked Questions
Can I prepare stuffed peppers in advance?
Yes. You can prepare the chicken filling ahead of time and refrigerate it until needed. You can also assemble the peppers before baking. If baking directly from the fridge, allow extra cooking time and ensure the filling is heated through completely.
What can I serve with chicken and bean stuffed peppers?
These stuffed peppers already contain chicken, rice, beans and sweetcorn, making them a satisfying meal on their own. You can also serve them with a fresh green salad or crusty bread.
Can I make this recipe less spicy?
Absolutely. Simply reduce or omit the Schwartz Chilli Powder. The paprika and dried herbs will still provide plenty of flavour.
