Roasted Lemon Chicken Drumsticks with a Spicy Roasted Chickpea Salad

Ingredients

 

Ingredients for the chicken legs –

 

– 1 pkt Dewfresh chicken drumsticks

– 1 teaspoon dried oregano

– ½ teaspoon dried thyme

– 1 teaspoon ground coriander

– 1 teaspoon smoked paprika

– Salt and black pepper

– 1 teaspoon garlic powder

– 2 tablespoons extra virgin olive oil

– 2 tablespoons lemon juice

 

Ingredients for the chickpea salad –

 

– 1 pkt of your favourite ready chopped greens

– 2 cups cherry tomatoes, halved

– 2 Tablespoons olive oil

– 1 medium red onion, sliced thinly

– 1/3 cup pitted Kalamata olives

– 1/3 cup crumbled Feta cheese

– 3 hard-boiled eggs, peeled and chopped

– 1 can chickpeas, drained and rinsed well, allowed to air dry a bit

– 2 teaspoons chili powder

– 2 teaspoons smoked paprika

– 1/2 teaspoon ground cumin

– 1 tsp garlic powder

– salt and pepper

 

For the dressing –

 

– 1 large fresh lemon, juiced

– 3 Tablespoons olive oil

– 1 teaspoon dried oregano

– sea salt and pepper, to taste

 

Method

Chicken Drumsticks –

1) In a large bowl, season the chicken drumsticks with dried oregano, dried thyme, coriander, smoked paprika, salt, pepper, and garlic powder.

2) Pour the olive oil and lemon juice over the chicken drumsticks. Toss everything very well. Marinate for at least 1 hour.

3) Preheat oven to 200ºC. Line a baking pan with parchment paper.

4) Place the chicken pieces on the prepared baking sheet. Roast for 30 minutes or so until they begin to brown.

5) Flip the pieces, and bake another 10-15 minutes.

 

Chickpea Salad –

1) Preheat your oven to 200ºC and line a flat pan with parchment paper.

2) Add the chickpeas to the tray and sprinkle with chili powder, paprika, cumin, garlic salt, and pepper. Drizzle with oil and toss well to get them all nicely coated.

3) Arrange the chickpeas in a single layer and roast for 25-30 minutes, until dark golden brown and crispy, tossing once or twice during roasting time.

4) Meanwhile, whisk dressing ingredients together in a small bowl. Set aside.

5) Place your choice of favourite greens into a large bowl and top nicely with crispy chickpeas, cherry tomatoes, onions, olives, feta, and hard-boiled eggs.

6) Gently toss your salad with the homemade dressing.

 

Serve your salad together with the lemon roasted chicken drumsticks and enjoy ❤️
