Sausage & Potato Bake by The Maltese Foodie

Ingredients
– Small baby potatoes, quartered
– 1 onion, minced
– 1/2 red bell pepper, sliced
– 1/2 green bell pepper, sliced
– 1/2 yellow bell pepper, sliced
– 1 pack Dewfresh beef & pork sausages
– 4 tablespoons olive oil
– 2 teaspoons Italian seasoning
– 1/2 teaspoon red chilli pepper flakes, or to taste
– 60ml chicken stock
– 1 teaspoon hot sauce of your choice (I used Sriracha)
– Salt and fresh cracked pepper
– Chopped parsley, for garnish
Method
- Preheat your oven to 200ºC.
- Arrange sausages, bell peppers, onions, and potatoes in a large baking pan.
- Mix all the ingredients for the sauce in a small bowl: olive oil, Italian seasoning, red chili pepper flakes, chicken stock, and hot sauce. Pour over the sausage and potatoes. Season with salt and pepper.
- Roast uncovered for 30 to 40 minutes, or until fully cooked through. Sprinkle with parsley and serve immediately, straight out of the oven. Enjoy! ❤️
