Red Onion and Marmalade Baked Cumberland Sausage


- 4 Portions
Ingredients
- 1 tbsp olive oil
- 10-12 Cumberland sausages
- 1 large red onion, quartered
- 2 apples, cored and quartered
- 1 whole bulb garlic, cut in half horizontally
- 150ml cider
- 1 heaped tsp wholegrain mustard
- 150g marmalade
- Few fresh thyme sprigs
- Crusty bread for serving (2 small maltese ftiras)
Method
- Heat the oil in a pan and crown together the red onion and apple quarters to caramelize.
- Remove the apples and add the sausages and garlic to the pan and cook for 4 minutes to brown.
- Pour in the cider and evaporate, followed by the mustard, marmalade and thyme.
- Tip the mixture into an oven proof dish, add in the apples and continue to cook in the oven at 220`c for 20-25 minutes until golden brown and caramelized.
- Serve into dishes with warm crusty bread.
