Beer Battered Chicken Fillet Pops (Recipe by Jon)


Ingredients
1 Packet Dewfresh Chicken Thigh Fillets (you can use also Dewfresh Chicken Breast)
1 cup All-Purpose Flour
¼ tsp Baking Powder
½ tsp Salt
¼ tsp Ground Black Pepper
½ tsp Garlic Granules
¼ tsp Smoked Paprika
1 can of Beer
sweet Chilli Sauce (for serving)
veg Oil for deep Frying (1ltr)
Method
In a medium-size bowl combine flour, baking powder, salt, pepper, garlic & smoked paprika together.
Add about 250ml of ice-cold beer. Ideally, place beer in a freezer for about 15mins. This will create a crispier batter.
Mix until you get to the consistency of light pancake batter. Fix accordingly with flour/beer ratio. Do not make thick batter.
Heat frying oil until you get around 170°c.
Dip the cut pieces of the chicken thigh fillets into batter, drip off excess and drop gently into the oil.
Cook into small batches until golden brown stirring occasionally to avoid sticking. This should take around 5-6 minutes.
Serve immediately with some sweet chili sauce.
