SFC Drumsticks and pasta salad

– 1 pkt Dewfresh SFC chicken drumsticks
– 200g of your favourite pasta
– ½ cup finely diced gherkins
– ¾ cup finely diced red bell pepper
– 1 finely diced red onion
– 2 large hard boiled eggs, finely diced
Salad Dressing:
– ¾ cup mayonnaise
– ¼ cup greek yoghurt
– 2 Tablespoons pickle juice
– 1 Tablespoon granulated sugar
– 2 teaspoons dijon mustard
– 1 teaspoon salt
– 1 teaspoon ground black pepper
– 1 teaspoon garlic powder
– 1 teaspoon crushed red pepper
1) Place the chicken drumsticks on a baking tray and bake for 20 minutes at a temperature of 200°C.
2) Prepare the pasta according to package instructions. Drain and rinse immediately with cold water, then drizzle with a teaspoon of olive oil and gently stir so the pasta don’t stick together as they sit.
2) In a large bowl, combine pasta, pickles, red pepper, red onion, and eggs. Stir until well-combined. Set aside and prepare your dressing.
3) To prepare your salad dressing, combine mayonnaise, greek yoghurt, pickle juice, sugar, dijon mustard, salt, pepper, garlic powder, and crushed red pepper in a medium-sized bowl. Whisk until ingredients are well-combined.
4) Pour dressing over your pasta salad ingredients and toss until well-combined.
For best flavour, cover bowl and allow to chill for at least one hour.
5) Take your cooked chicken drumsticks out of the oven and serve with a side of your pasta salad and enjoy ????
