Piri Piri Chicken Legs in collaboration with The Maltese Foodie

– 4 whole chicken legs, (thighs and drumsticks attached)
– 3 tablespoons lemon juice
– 4 cloves garlic, minced
– 2 teaspoons salt
Piri Piri Sauce:
– 2 to 3 red Thai chilies, you can use more if you like a spicier dish
– 2 cloves garlic, roughly chopped
– juice of one whole lemon
– salt and fresh ground pepper, to taste
– 2 teaspoons sweet or smoked paprika
– ¼ cup olive oil
1) In a small mixing bowl whisk together lemon juice and garlic.
2) Pour the lemon mixture over the chicken.
3) Season chicken with salt; cover and let sit on the kitchen counter for 30 to 60 minutes.
4) In the meantime, chop the chillies and garlic; add to a blender or food processor.
5) Add in lemon juice, salt, and pepper. Add paprika and oil; process until smooth and completely combined.
6) Preheat oven to 200˚C.
Place the chicken in a roasting pan and roast for about 32 to 35 minutes, or until cooked through.
7) In the meantime, preheat a griddle pan to medium-hot.
8) Remove chicken from oven, place on griddle and brush on prepared Piri Piri Sauce all over. Cook for 2 minutes, or until browned and starting to char.
9) Flip chicken over and continue to cook for 2 minutes, or until browned on opposite side.
10) Serve with some fries, corn on the cob and spicy rice ❤️
