For the Grilled Arayes
- 800g Dewfresh Ground Beef
- 4 small pitta breads
- 1 medium onion, grated
- 4 garlic cloves, minced
- 25g fresh flat-leaf parsley, finely chopped
- 1½ tsp ground coriander
- 1 tsp fennel seeds, lightly toasted and crushed
- 1 tsp freshly ground black pepper
- ½ tsp chilli flakes
- 1½ tsp salt
- 2 tbsp olive oil (plus extra for brushing)
For the Yoghurt Mint Sauce
- 250g Greek yoghurt
- 1 garlic clove, minced
- Juice of ½ lemon
- Small handful fresh mint, finely chopped
- Salt to taste
- Olive oil and sumac to finish
1. Prepare the Beef Filling
In a large mixing bowl, combine the Dewfresh Ground Beef with the grated onion, garlic, parsley, ground coriander, fennel seeds, black pepper, chilli flakes, salt and olive oil.
Mix thoroughly until all the ingredients are evenly combined.
2. Make the Yoghurt Sauce
In a separate bowl, combine the Greek yoghurt, garlic, lemon juice and chopped mint.
Season with salt, drizzle with olive oil and finish with a sprinkle of sumac if using. Refrigerate until ready to serve.
3. Fill the Pitta Bread
Cut each pitta bread in half to create two pockets.
Fill each pocket with approximately 125g of the beef mixture, pressing firmly so the filling reaches all the edges and the pitta remains flat.
4. Brush with Olive Oil
Lightly brush both sides of each stuffed pitta with olive oil. This helps create a beautifully golden, crispy exterior when grilled.
5. Grill
Heat a griddle pan or BBQ to medium-high heat.
Cook each Arayes for 4–5 minutes per side, pressing gently with a spatula, until the bread is crispy and golden and the beef is cooked through.
6. Finish in the Oven (Optional)
If needed, transfer the grilled Arayes to a preheated oven at 200°C for 2 minutes to ensure the filling is fully cooked.
Serving Suggestion
Serve the Grilled Arayes hot with the chilled yoghurt mint sauce and a fresh salad, or grilled vegetables for a complete meal.
