Ingredients

For the Chicken Meatballs

  • 500g Dewfresh Chicken Mince
  • 1 spring onion, finely sliced
  • 1 tsp paprika
  • 1 tsp curry powder
  • 2 tsp dried basil
  • ½ cup grated cheese
  • A drizzle of olive oil, for cooking

For the Mushroom Sauce

  • 1 onion, sliced
  • Fresh mushrooms, generously sliced
  • A little water
  • Freshly ground black pepper, to taste
  • 1 tsp curry powder
  • Fresh cream, as needed

To Serve

  • White rice
  • Fresh salad
  • Steamed or roasted vegetables
Method

1. Prepare the chicken meatballs

Add the Dewfresh Chicken Mince, sliced spring onion, paprika, curry powder, dried basil and grated cheese to a large bowl. Mix well until all the ingredients are evenly combined.

Divide the mixture and shape it into approximately 15 chicken meatballs.

2. Cook the chicken meatballs

Heat a drizzle of olive oil in a large frying pan over medium heat. Add the chicken meatballs and cook, covering the pan and turning the meatballs occasionally, until they are cooked through and golden on the outside.

Remove the chicken meatballs from the pan and set aside.

3. Make the mushroom sauce

Using the same pan, add the sliced onion and mushrooms. Cook until the vegetables begin to soften and the mushrooms release their juices.

Add a little water, freshly ground black pepper and curry powder. Stir to combine.

Pour in the fresh cream and allow the sauce to gently simmer until it becomes creamy and the flavours come together.

4. Finish the dish

Return the cooked chicken meatballs to the mushroom sauce. Stir gently to coat them in the sauce and simmer for a few minutes.

5. Serve
