Sausage & Potato Bake by The Maltese Foodie

Ingredients

 

– Small baby potatoes, quartered

– 1 onion, minced

– 1/2 red bell pepper, sliced

– 1/2 green bell pepper, sliced

– 1/2 yellow bell pepper, sliced

– 1 pack Dewfresh beef & pork sausages

– 4 tablespoons olive oil

– 2 teaspoons Italian seasoning

– 1/2 teaspoon red chilli pepper flakes, or to taste

– 60ml chicken stock

– 1 teaspoon hot sauce of your choice (I used Sriracha)

– Salt and fresh cracked pepper

– Chopped parsley, for garnish

Method

 

  1. Preheat your oven to 200ºC.
  2. Arrange sausages, bell peppers, onions, and potatoes in a large baking pan.
  3. Mix all the ingredients for the sauce in a small bowl: olive oil, Italian seasoning, red chili pepper flakes, chicken stock, and hot sauce. Pour over the sausage and potatoes. Season with salt and pepper.
  4. Roast uncovered for 30 to 40 minutes, or until fully cooked through. Sprinkle with parsley and serve immediately, straight out of the oven. Enjoy! ❤️
