Red Onion and Marmalade Baked Cumberland Sausage

  • 4 Portions
Ingredients
  • 1 tbsp olive oil
  • 10-12 Cumberland sausages
  • 1 large red onion, quartered
  • 2 apples, cored and quartered
  • 1 whole bulb garlic, cut in half horizontally
  • 150ml cider
  • 1 heaped tsp wholegrain mustard
  • 150g marmalade
  • Few fresh thyme sprigs
  • Crusty bread for serving (2 small maltese ftiras)
Method
  • Heat the oil in a pan and crown together the red onion  and apple quarters to caramelize.
  • Remove the apples and add the sausages and garlic to the pan and cook for 4 minutes to brown.
  • Pour in the cider and evaporate, followed by the mustard, marmalade and thyme.
  • Tip the mixture into an oven proof dish, add in the apples and continue to cook in the oven at 220`c for 20-25 minutes until golden brown and caramelized.
  • Serve into dishes with warm crusty bread.
