Pasta with Cumberland Sausage Ragu

Ingredients
• 400g Dewfresh Cumberland Sausages
• 1 Onion, minced
• 6 Garlic cloves, minced
• 30g Tomato paste
• 2 sprigs Rosemary or Thyme
• 250ml Chicken stock
• 1 Parmesan rind (optional)
• 50g Parmesan, grated
• Handful of Parsley, chopped
• 250g Tagliatelle
• 2000ml Water
• 20g Salt
Method
- Remove sausage from casings, break into chunks
- Brown in pan over medium heat
- Add onion + garlic. Cook until soft
- Stir in tomato paste. Cook for 1–2 mins
- Add stock, herbs + parmesan rind. Simmer for 15–20 mins
- Boil salted water, cook tagliatelle
- Remove herbs/rind, stir in parmesan & parsley
- Toss cooked pasta into sauce
- Plate, finish with more parm & parsley
